Tofu Cooking -- Both Expert and Basic

Denver chef and long-time cooking instructor Church assembles here a wide-ranging bunch of carefully constructed tofu dishes from various Asian traditions.
In addition to the recipes, information about tofu in general, special ingredients, appropriate kitchen equipment, and techniques are here including short chapters on "Serving an Asian Meal" and "A Word About Asian Markets." There are about one hundred recipes here. My favorites are the Mee Krob, Iced Tofu, the curries, Five Treasure Platter, and the Thai Tofu and Cucumber Salad.

Wonderful cookbook

Just got this in ebook form from lulu, and it is a great book. Tons of recipes, lots of great notes about technique, and plenty of variety. Recipes range from very simple and easy Mon-Fri meals to more sophisticated projects. This is the kind of cookbook I love, because it is not just a recipe book - you will learn skills and techniques that you can then apply to your own creations. I just made the Vietnamese tofu in tomato sauce, and it was fantastic.
